Pros: Nothing sticks to it - Nothing!
A Silpat is a must have for anyone who ever uses an oven. It's a silicone mat that is completely non-stick. Literally anytime I turn on my oven, I use my Silpat. I use it for cookies, bread, pizza, homemade french fries, putting under silicone muffin cups etc.
I've never had anything stick to the mat. I made homemade pretzels, which are normally quite sticky since they're boiled prior to baking. They don't stick. I've made homemade caramels. They don't stick. Chocolate-dipped strawberries slide right off once they cool. You can also use it for rolling out pastry dough, or anything sticky on the counter. Just don't cut on it.
You just rinse the mat off after using, no need to wash. A little oily feeling is normal. If you are making something like french fries, you can use a little less oil. I use less than a tablespoon of olive oil when I make a whole pan full.
If you don't have one of these, get one - or two! I have one for savory items and one for sweet items since they do retain some of the "flavor" of your food. I wish I had five, though.
