Leftover Pork Chops

We have 4 larger leftover baked pork chops that I want to use up tonight...I was thinking about shredding them up and adding some bbq sauce and then serving them with bread and rice and a veggie...pork chops are always hard for me to figure out what to do with them that is different and just not so blah!!! Help!! Anybody have any leftover ideas for pork chops??

You could make enchilada's or taco's out of them. My family loves that. Throw in some cheese, olives, mushrooms, onions....whatever is in your fridge. We love the green enchilada sauce with pork. It's awesome!

I think bbq sauce sounds good. It would mask the left over pork chop flavor I eat every thing else left over, but for some reason, left over pork chops just don't taste right to me.

Hmm...pork chops make very dry leftovers. I don't know how easily they will shred. Cut up you can do lots with them or you could dump them in a pan and top with 1 can cream soup, 1 packet dry onion soup mix and some milk. simmer until falling apart tender and serve over mashed tatoes.

I'd make fried rice - a big batch of brown rice, egg, veggies (whatever you like), the pork chops cubed, and a bit of soy sauce. My family loves it.

My kids LOVE fried rice and leftover pork makes the best kind. If you are not familiar with making it, try one of the fried rice seasoning packets they sell at the grocery store.
