Greek Salad~

We love this and eat it a few times a week in the winter and in the summer maybe 3-4 times.

8 ounces feta cheese
2 medium tomatoes,diced
1 large cucumber,peeled,diced
1 onion sliced into strips or green onion diced
1/2 can black olives left whole

Mix everything except for the feta cheese.I make the dressing recipe & dump the dressing over it and let it sit in the fridge for a few hours.A must to melt the flavors.Then before serving I add in the cheese and mix it up.In the summer we have it in pita's with alfalfa sprouts for a whole meal.

Dressing~
4 1/2 T. lemon juice
1 1/2 t. dried oregano
1 1/2 t. salt
3/4 t. pepper
4 1/2 T. extra virgin olive oil.

I put it in a shaker container and dump it over and mix up the salad.I use a rubber spatchula to make sure I get it all out.

Yum! That sounds so good, I like the pita and sprouts idea

Ymmm....I would have never thought to eat it in a pita. That sounds so good.

I love greek salads done in a pita. But in a greek salad, you also have to have the real greek olives (with the pits), pepperonici peppers, sliced beets, and adding some dill is REALLY nice. Also great w/ grilled chicken slices.

I had it that way and the juice from the pepperonicini's was great but to much for the kids and I am so scared of the olives with pits breaking a tooth.But do enjoy them with adult gatherings with some wine and cheese yum!

Do you mean the Kalamata olives? I have found them in jars where they're pitted already, which is nice. Love them.  I like red onion in mine too.  I don't think I would like beets.

Yes - kalamata olives. With the olives & peppers, I put them on a separate plate, cut them (take the pit out of the olive & seeds/juice out of the peppers) & put them back in the salad.

Just an FYI I have discovered it's cheaper to get kalamata olives on my grocery salad bar than in the jars.

Oh awesome.Thanks Kim.I will be looking for them in the jars.We do have a salad bar with some stuffed olives but not those.Maybe sometime in the future they will.
