VELVEETA Down-Home Macaroni & Cheese

Ingredients:
1/4 cup (1/2 stick) butter or margarine, divided 1/4 cup flour

1 cup milk
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes 2 cups elbow macaroni, cooked, drained
1/2 cup KRAFT Shredded Cheddar Cheese
6 RITZ Crackers, crushed

Directions:
HEAT oven to 350°F. Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk; cook until mixture boils and thickens, stirring constantly. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
SPOON into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.
BAKE 20 min. or until heated through.

Yield:
Makes: 5 servings, 1 cup each

I happened to have all the ingredients for this - I never have velveeta but I made some Rotel dip for the superbowl and had it left over - and I made it tonight. My family devoured it!!! My dh and kids ate 2 huge servings each and kept saying how yummy it was. The 3 year old wanted to make sure there was enough for him to eat for lunch tomorrow. Thanks!

this is how I make mine, sort of. I use half the amount of butter and I use more velveeta, about 2 lbs. I make a big batch (usually 16oz bag of noodles), and I use 4 cups of milk. I don't add the crackers b/c I don't like the taste with them for leftovers. If I do add them I only add them to half the pan just in case. I also don't add the cheddar cheese, but that is b/c my kids prefer it that way.

allgirls - this actually sounds almost exactly like the way I did it. I used a 16 oz. box of whole wheat noodles, doubled the velveeta, doubled the milk, and halved the butter. I winged it a little. It would have been way too dry without more milk. I did use the topping but it was only enough to sprinkle on top and you could easily leave it off without noticing much difference in the taste.

This is how I make my Mac & cheese and everyone loves it, it is so good! One thing I do sometimes is cook some bacon until crisp, crumble it up and add to the top with the cracker crumbs. Yum!

We make basically the same recipe, but I don't do the cracker topping.  Instead of macaroni, sometimes I use shells.
