Recipe for Ramen Noodle Meatball Soup

I cannot find my recipe for Meatball Soup that I make with ramen noodles. It is a very easy recipe but I cannot remember everything that was in it. Anyone else make it? I know it also had fresh spinach in it too. My kids love it. Can anyone help?!

I found this one except it does not have spinach

1 package (3 ounces) beef-flavored ramen noodles
3 cups water
1 jar (14 ounces)
spaghetti sauce
1 cup frozen peas and carrots
1 package (16 ounces) frozen fully-cooked Italian-style meatballs


1. Break the ramen noodles into small pieces over the classic batter bowl and set them aside. Put the water, spaghetti sauce, and seasoning packet from the ramen noodles in a medium (2-quart) saucepan.
2. With adult help: Heat the soup mixture over medium heat until it comes to a boil. Add the ramen noodles, peas and carrots and meatballs. Heat the soup until it boils again, then turn the heat to low. Cook and stir the soup for 4 to 5 minutes using a bamboo spoon.
3. With adult help: Using a ladle, pour the soup into serving bowls. Enjoy!
Makes about 6 servings.
If youd like, you can grate fresh Parmesan cheese over the soup in each bowl.

Italian Wedding Soup~(use Ramen noodles in it instead of acini di pepe or other small pasta.


1 lb. ground turkey
2 eggs, beaten
4 TBS Panko breadcrumbs
3 TBS parmesan cheese
1.5 tsp. oregano
1.5 tsp.basil
1 tsp. garlic powder
6 c. vegetable broth
4 c. chopped spinach
1 c. chopped onion
2/3 c. diced carrots
3/4 cup chopped cooked chicken
1 c. diced tomatoes
1 c. acini di pepe or other small pasta


Mix ground turkey, egg, breadcrumbs and spices in bowl. Shape into small meatballs.
Bring broth to boil. Add in meatballs and chopped vegetables. Boil 15-20 min. Add pasta and chicken and boil 5 min more. Add dash of lemon, salt, and pepper to taste.

Number of Servings: 12
