Can't find that thread for someone who needed a recipe for a shower, but here's my version of Thai Peanut Noodles. I just had a big plate of it for dinner - yummy!
1/3 c hot water
1/3 c smooth peanut butter
2 t soy sauce
2 cloves finely minced garlic (I get the pre-minced)
2 t rice vinegar
Garnish - red hot pepper flakes to taste, 1 T finely chopped scallions
Optional: cooked chicken or shrimp
In a glass measuring cup, mix the water, PB, soy sauce, garlic & rice vinegar. If you chopped up extra scallion, you can toss that in as well. Since I like the sauce a lot, I double all measures - especially if I am adding cooked chicken or shrimp to it.
Heat the mixture in the microwave - 1 minute, stir, then going 30 seconds, stirring, until it is smooth and hot.
Pour over cooked spaghetti noodles. Add in the chicken or shrimp if you have it. Garnish.
Super delicious when freshly made. Next day leftovers in microwave - add a little water to it. Still OK but not as good.
