Breakfast Potluck Recipes

Every pack meeting for Scouts we have a potluck dinner. Next Tuesday is our last meeting and it will be a breakfast potluck. In all the potlucks I have been taken food to, I have never done a breakfast one. I know that there will be pancakes and sausage. Oh and someone is bringing a fruit salad too. Just looking for some good ideas on what would be good to bring. It has to be kid friendly food and something that is easy to transport. It will have to be fully cooked for the potluck. I have a few ideas:
Scrambled eggs with cheese and maybe crumbled bacon **Can eggs be keep warm in a crock pot??**
Mini muffins

Oatmeal (can keep in a crock pot)- you can bring raisins and brown sugar to use as toppings

French toast casserole, Muffins, Banana Nut bread, Hash brown casserole, Baked French toast. I know they make another casserole with scrambled eggs and cut up sausages - it's called breakfast casserole. Quiche is also a good one. HTH

CHEESE OVEN OMELET

10 eggs
1 c. milk
1/2 tsp. seasoned salt
1/2 c. shredded cheddar cheese
1 tbsp. minced onion

Heat oven to 325 degrees. Beat eggs, milk and seasoned salt. Stir in cheese and onion. Pour into greased 8 x 8 x 2 inch pan. Bake 45 minutes or until omelet is set and top is golden brown. "So easy and so good."

This coffee cake is outstanding! If you don't make it for that, try it some other time.

1 LB. bulk sausage
4 slices of bread, cut into 1/2" cubes
6 to 8 eggs
2 cups milk
1 cup of shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. dry mustard
Crumble sausage in a medium skillet, cook over medium heat until brown, stirring occasionally. Drain well.

Spread bread cubes in a buttered, baking dish top with sausage and cheese. Combine eggs, milk, seasonings, beat well and pour over cheese, cover and refrigerate overnight.

Bake at 350 degrees for 30-40 minutes or until set. Yield: 6-8 servings

1/2 medium onion, finely chopped
1 Tablespoon butter or margarine
3 cups cold, cooked potatoes, cut into small cubes
4 oz. can diced green chili's, drained well
1 cup small curd cottage cheese
1-2 cups cheddar cheese, grated
10 eggs, lightly beaten
1 t salt
¼ t pepper
pinch nutmeg

Brown onion in butter. Mix all ingredients together and place in greased 9'x13" pan. Cover and refrigerate overnight.

In the morning, bake at 350 degrees for 1 hour or until set. Serve with salsa on the side; if you want.
