I just read this tip in a book and will be trying it: when you freeze bread put paper towel in the bag to soak up any moisture when it is defrosting and gets rid of soggy bread.
Simple but I had never thought of it.

I read this after I had already put the bread in the freezer. So, I put a paper towel in it after I took it out of the freezer while it thawed. It worked great, no soggy bread!
