I made some yummy fajitas this week with chicken, red pepper, and pineapple. The seasoning was jerk seasoning. It sounded weird, but we tried it and it was good!

We usually do chicken sometimes steak. For the veggies we always do peppers and onions. We use a cajun seasoning for the meat to make it spicy.

I marinate chicken in pre-made fajita marinade and grill it along with red onions and red and green peppers. I slice everything up, give it a squeeze of fresh lime and serve it with tortillas, cheddar cheese, jalapenos, salsa, sour cream and guacamole. It tastes just like the ones they serve at Chili's!

We have leftover steak, and I want to make fajitas from that.  Any idea on how to do that when the meat is already cooked?

I would add taco seasoning

You could still marinate the cooked steak (after slicing it) and it should absorb some of the flavor. Then just cut the time you cook the meat.

I have another fajita recipe here somewhere, but can't repost it until I get to a computer.

This is what I used for the fajita marinade:

1/4 C. olive oil

about 2-3 Tbsp. lime juice

chopped fresh cilantro

1 tsp. sea salt

1 tsp. chili powder

3 cloves garlic, minced

I put everything in a zip lock bag for about an hour.  It was easy and really good.
