My kids like this cold pasta recipe.
Mix cooled cooked noodles (rotini are fun for little ones to eat) with whatever salad dressing you have. My girls like it mixed with Dorothy Lynch dressing. Add cut up bits of cheese and thawed frozen peas if they like those as well.
Cost less than $1.00.

-Spread cream cheese on bottom bagel. Add sliced cucumbers and top with other half of bagel.

-Spread some peanut butter on a hot dog bun. Add a banana sliced in half.

On cold days, my daughter enjoys bringing this quick, easy and very inexpensive lunch to school in her thermos. I buy the generic brand of alphabet pasta at my local grocery store for about $1 and a large container of chicken or beef stock which can be kept in the fridge after being opened. On cold mornings, I pour a little of the stock in a small saucepan and boil the pasta in it. Once cooked, it goes right in the thermos and is still hot when she gets to lunch. I also toss in leftover meat or veggies from dinner the night before if we have it and she likes when I sprinkle a little parmesan cheese as well.

Rather than spending money on pre-packaged and unhealthy cans of pasta, I make mini turkey meatballs and freeze them in individual containers with homemade spaghetti sauce. My local grocery store sells a 1 lb box of pasta rings for about $1 so I always have these on hand. With a little planning ahead, you can defrost one of the containers of sauce with meatballs the night before and boil just the amount of rings needed the morning of to pack into a thermos for lunch. My daughter actually likes my homemade sauce better and I know it's a lot healthier for her and a lot less expensive for me.
