This is my husband's favorite breakfast. I make it when I want to do something special for him, or for an occasion like Father's Day.
easy version: make french toast, and dip each side in coconut flakes before cooking.
1 1/4 c. milk
2 t. sugar
1 t. cinnamon
14 slices day old bread
7 oz flaked coconut
Beat eggs. Add milk, sugar and cinnamon. Add bread, a few slices at a time; let soak for 1 minute on each side. coat both sides with coconut. Place on greased baking sheets. Bake at 475 for 5 minutes on each side, or until golden brown and cooked through.
You can either serve with syrup, powdered sugar, or do what we do and eat it with fruit and whipped cream. Our favorite is mango and raspberries!
