Coconut French Toast

 

This is my husband's favorite breakfast. I make it when I want to do something special for him, or for an occasion like Father's Day.

 

easy version: make french toast, and dip each side in coconut flakes before cooking.

Actual Recipe:
12 eggs
1 1/4 c. milk
2 t. sugar
1 t. cinnamon
14 slices day old bread
7 oz flaked coconut

Beat eggs. Add milk, sugar and cinnamon. Add bread, a few slices at a time; let soak for 1 minute on each side. coat both sides with coconut. Place on greased baking sheets. Bake at 475 for 5 minutes on each side, or until golden brown and cooked through.

You can either serve with syrup, powdered sugar, or do what we do and eat it with fruit and whipped cream. Our favorite is mango and raspberries!

that sounds incredible and It's going to be a really great way to use my homemade bread up. My bread just isn't good after the second day without all the preservatives that store breads use to keep bread fresh for a week.

This is an easy "fancy" breakfast I've been making for years.  Still my husband's favorite!

That looks really good, I love coconut!

 

I always add a little homemade vanilla extract and a dash of nutmeg to my french toast.
