Risotto is my kids' favorite, but a little labor intensive. We have it once a week.
Carrots in butter with a little dill. (Best way to do this, is melt 2 tbsp. butter in a dutch oven, saute a little onion and garlic until soft, then add sliced carrots, saute about 3-4 min. Add about 1/2 cup water. Cover for at least 15 min. until all water is absorbed. Sprinkle dill and salt to taste. The carrots will still hold a little crunch, but my kids suck them down.)
Green bean tossed with butter and garlic. If I am feeling adventurous, I wrap them in bacon and bake.
Stir fry cabbage with onions and garlic.
Grilled asparagus - don't forget the lemon.
Those are the big hits, but we do the standard also, peas, rice, cauliflower and/or broccoli with cheese, etc.
