any recipes using lunchmeat (ham or turkey)?

I bought some sliced ham and turkey pretty cheap, but it's not a brand I've purchased before and it's not that great. It's not bad, but it's not good enough that we want to eat it on a sandwich. I was hoping to find some kind of main dish to make to use it up - any suggestions?

Throw it in an omelet or mix it in with some mac and cheese.

You could make ham (or turkey) & cheese quesadillas or grilled cheese & ham (or turkey) sandwiches.

you could cut it up (in strips or squares) and warm it up in gravy and serve it over mashed potatoes, rice, or noodles.

My family loves this recipe. I found it when I was on Weight Watchers. You can modify it. I use homemade breadcrumbs that I season myself for the coating, and it's good with either turkey or ham. Delicious!

The Laughing Cow Chicken Cordon Bleu

Ingredients

4 - 4 oz B/S chicken breasts
4 wedges laughing cow cheese (any flavor)
4 servings extra lean ham (maybe Deli Select)
1/2 package shake N bake

Directions

Pound each to about 1/4 inch thickness.
Spread one wedge of cheese on top of each breast.
Then put on 2 to 3 slices ham.
Roll up the chicken and secure with toothpicks.
Place on a baking tray and sprinkle with Shake N Bake.
Bake at 400 for about 35 to 40 minutes.

That Chicken Cordon Bleu sounds yummy - thanks! That's what I really wanted was a main dish type of thing.

I thought about omelets, but my kids don't care for them. They will eat quesadillas, though, so I might make those.

Try adding cut pieces to your salads or pasta salads...I'm protein junky so this is something I do regularily!

Also try making Ham & Egg Cups...




Ingredients:
-12 slices of deli ham
-12 eggs
-grated cheese
-seasoning
-chopped basil

Directions:
-Spray muffin tins with Pam.
-Line each cup with a slice of deli ham (I asked that they not be sliced too thin...and had rather hefty slices this time).
-Break an egg gently into each ham cup. Season with salt and pepper...sprinkle with chopped basil (or chives or your herb of choice).
-Bake at 350' F for about 15 minutes.
-Remove from oven...and top each egg with grated cheese (cheddar or parmesan)...and bake for 5 minutes longer.
-Remove from pan and serve immediately.

**Add ingredients (or delete) that suit your family's tastes!!!!

Ham & Turkey Spread

Ingredients
2 c Finely chopped cooked turkey
1 c Finely chopped cooked ham
1/2 c Finely chopped green onion
1/2 c Finely chopped carrot
1 pk (8-oz) cream cheese,
1 Container (8-oz) sour cream
1 c Mayonnaise
2 tb Worcestershire sauce

Directions
-Mix well all ingredients together in a bowl, serve with crackers! Easy!!!

This recipe works well with all canned meats...I don't mix mets if using canned though.
