Are you serving something special for St. Patrick's Day? What's for dinner on the 17th?

I'm going to make this split green pea soup recipe again, with homemade rolls.

Wish we were having corned beef, though!

The Princess is home on spring break so we've made a menu she wants to help cook for tomorrow night.

We're making this Beef Hash O'Brien recipe Beef Hash O'Brien | Recipes | Mrs. Dash I'm going to cook the beef some first because it seems like it would be tough just stir frying it a few minutes, and I'm also going to add diced onions.

She's meeting some of her HS girlfriends for lunch tomorrow so I told her we'd make enough for her to take each of them a little bag of them.

We're probably going to have another vegetable and then hopefully some Irish Soda Bread with it.

oooh those oreo mint balls look good. I've been looking for a quick and easy st. patrick's day dessert to make. Of course, we don't have oreos, or cream cheese. Or white chocolate. Or food coloring. hmm. Still, I think I can invent something with rip-off Indian oreos and mint flavouring.

We had Oreo truffles (the same mixture of oreos and cream cheese...just regular oreos) dipped in chocolate (instead of the "dyed" white chocolate) for Thanksgiving at a relative's house. My family DIED over them. They are so yummy. So when I saw this recipe I thought perfect! Yummy, green and easy enough for cooking challenged aliadam to make!!

those do sound really good. I realized my chances of finding peppermint extract are slim, so I'm going to experiment with what I think *might* be cream cheese and make brownies with (green) cream cheese frosting.

I have not thought about it, but I am not a big fan of Irish food. I do love potatoes though. When I figure out the menu I will post it.

Can you use a crockpot instead… and when its say remaining liquid does that me drain the liquid of the corned beef and use it for the potatoes/carrorts/cabbage? Reply

Yes, you reserve the liquid from cooking the brisket to boil the potatoes/carrots/etc. I am sure you could use a crock pot but I'm not sure of the cooking time. I would try it on low all day (8-10 hrs).
