I ran through the last of my free jars of peanut butter 2 weeks ago. I ended up buying peanuts cheap and making my own. Cost me about $1 for 16oz. It's not shelf stable so you'll have to pop it in the fridge, but it's so quick to make AND doesn't contain any crap. We've actually been burning through this faster than we've ever gone through store bought peanut butter. It's really tasty.

 

ETA: might as well post my recipe while I'm at it

- 2 cups/1lb of shelled/raw/roasted peanuts (whatever you pick up is fine)

- approx 1-2tbs of oil (any oil you have on hand, I like using coconut oil, I think it's thicker and creamier)

-salt to taste

 

Blend/grind/process the peanuts until they are as fine as possible (or until the consistency you want for chunky), add some oil and blend some more to creamy it up (and salt to taste, I add a pinch or two of fine sea salt). Ta-da. Literally, 5 minutes (unless you're shelling peanuts too lol)

We buy the natural peanut butter, the kind you have to stir. Our issue is Ds is the only one who uses it. I wonder if I could take you recipe and make smaller batches.

Absolutely. I find that this size batch is nice because many peanuts already come in 1 lb bags (if I get them pre-shelled), and the amount fits well into an existing peanut butter container. Essentially I'm just lazy and don't have to measure anything or put away opened packets of stuff lol

 

It'll keep in the fridge for months though, so even if you do make the above sized batch there's not a rush to use it. Keeping it outside of the fridge you run the risk of it going rancid because of the oils is all.

Well when we run out of this jar I will do this. You can also freeze peanuts so when you find a good deal grab them then. I keep all my nuts in the freezer.

So glad I won't have to worry about peanut butter for a few more years. DS still has a year on WIC and DD has 3. We get 4 jars a month and generally only go through 2-2.5. So much other stuff is going up up up. Bananas are insane. 78cents a lb which isn't many at all. I usually spend $6 at a time and they only last 1-2 days!

I noticed it when we ran out - I thought I had bought enough be we used more than I thought. I hope the prices will come back down next year but I guess that is too much to ask - I mean really how often do prices go down. I think it is insanely expensive but what can you do other than quit eating it and that isn't going to happen. I was not too disappointed when DS stopped asking for PB sandwiches in his lunch.
