We do this same thing!  We call it Frittata.  It could have potaotes, pasts, rice or bread in the bottom, leftover veggies & chopped up leftover meats in the middle, beaten eggs to fill it up & then topped with cheese.  We eat a version of this 4xMonth.  At least.  Sometimes more  :)

These are SOOOOO good!  Here is my recipe for the Spanish Omelet (Tortilla Espanola).  The caramelized onions give it such a rich flavor.

Ya'll have good tips, I'm definitely going to try a few out! I travel a lot for work, and I try to get rid of all my perishables before I leave, so I'm in this situation on a pretty regular basis. Even when I am in town though, we work long Monday-Thrusdays so we get short days on Friday, so sometimes I'm just too tired to get to the store anyway

 

One of my cheap go-to meals that I don't even have to go to the store for is pasta with previously frozen green beans and cherry tomatoes, EVOO and a couple drops of lemon juice (from a bottle).

 

If you go to the store, breakfast for dinner (eggs and toast, French toast, pancakes, breakfast stir-fry [potatoes (previously-frozen), cheese, spinach, previously-frozen tomatoes]) is always a good option on a budget.

 

Also, I try to cook meat in bulk and freeze it so when I get back from travelling, I have minimal effort on cooking, since jet-lag sucks. For instance, I'll buy ground turkey meat and cook a lot of spaghetti sauce and freeze it in smaller containers so all I have to cook is the spaghetti. I do this with chicken breasts, too. Cook them, cut them in half and freeze. I'll microwave it and some frozen vegetables (green beans, broccoli, etc.) for my side dish and have a quickly-cooked, healthy meal. 

 

Finally, I do like to cook with herbs when I'm in town, but they go bad pretty quick. So, if it's basil or something you can add to just about anything, I cut up the leaves, put them in ice cube trays, fill them with EVOO and freeze. That way, I can make pasta, throw one of the herb cubes and a couple drops of lemon juice and call that a meal as well.
