A new twist on an old favorite! If you like stuffed peppers and Mexican food, you'll love these Mexican Stuffed Peppers. It's also a great way to use up leftovers. I pulled any vaguely Mexican leftovers from my fridge for this dish, including leftover taco meat and rice. You can switch it up and add whatever you have on hand - beans, tomatoes, etc.
Mexican Stuffed Peppers
6 bell peppers (any color)
1 1/2 c. taco meat
1 c. cooked rice
1/2 can corn
3 green onions, sliced
2 tablespoons cilantro
1/4 c. salsa
1/2 c. shredded cheese
Slice the top off the peppers, and remove the seeds. Mix remaining ingredients (except cheese) and stuff into prepared peppers. Replace the top of the peppers. Bake at 350 for 1 hour, or until pepper is cooked. Sprinkle with cheese before serving.
