Any Vegetarians on board? - Page 2

How's it going, Missy?  Are you still sticking with the plant-based?  I would love to know what recipes you have really enjoyed.  smile.gif

Yep I'm still hanging in there!   

 

There have been a few recipes we really liked, I'm trying to stay with recipes I know my kids will eat or at least try. 

 

We are trying this one tonight: http://grumpyoldgoat.com/vegan/penne-primavera.html minus the mushrooms (yuck) and the pine nuts (dh won't eat them)

 

My husband told me today he has lost 5lbs since I started this diet. LOL We are all doing this together,though I'm not forcing the kids right now.  If they truly don't like what I've prepared, I let them have something different.  The other day my daughter asked me specifically if we could ravioli for dinner so I bought her some and made it for her, while I made a vegan meal for me and dh. 

 

My middle daughter is really embracing this though, and wants to see how long she can be a 'vegetarian'. LOL

That's great!  The recipe looks really good - was it?

 

So far, I think my kids absolute favorite is a "slightly processed" (LOL) meal.  I get the Quorn beef grounds, vegan cheese  (my favorite is Rice Shreds if you can have that), and sprouted tortillas, and I make beef and cheese quesadillas.  Add whatever veggies to it, but since my kids are young and want only the beef and cheese, they get green beans and carrots for the vegetables.  In fact, this was our exact meal tonight.  It is one of those euphoric meals where everyone cleans their plates!  LOL  I try to do VERY little processed stuff, but I do serve this or the Quorn nuggets once every week or two. 
 

ETA: I forgot to add that I add seasonings to make the taco flavoring.  I use this one, more or less.

I am not supposed to eat anything white, but pasta and rice is okay as long as they are brown. LOL

 

And OMG that recipe is AWESOME!!  Highly recommend, so filling and you don't even realize its vegan! I put a salad on the side and its terrific.

That Quorn stuff looks intersting! I will have to look for that. 

 

OH and I found some 'boca burgers' at ALDI, they were pretty good for a snack or lunch too.  I put some salsa on it and just at it that way with a nice green salad or homemade sweep potato fries.   They do have cheddar cheese in them, but I think its just enough to give it a flavor, there isn't much in there at all.

My kids love the chicken nuggets.  The beef crumbles are not the same texture as beef, so it is best in something like a quesadilla.  I didn't like their meatballs very much.  At first I thought they were really good, but not so much anymore.  Your taste buds really start changing.  (BTW - If you don't mind a little soy every once in a while, my absolute favorite meatball is Nate's. Crazy-good.)

Im not a huge meat eater myself either... although my italian side does not allow me to stop eating cheese (especially Parmesan!) ... I cook a lot of "vegetarian" meals, mainly because we are so picky with our meat, the ones we like, we cannot always afford (fillet mignon)

 

My favorite is grilled veggies (zuccinni, carrots, bellpeppers, etc) a little olive oil, sea salt, a hint of balsamic vinager and grill them until nice and chared.

They are sooo flavorful!

 

also a salad that could be adapted (I put chicken & cheese) but you can omit it...

*shredded all raw of the following:

carrots, beats

*diced celery, corn kernnels,

you can add other ingredients...

 

Then add lemon juice,salt, olive oil.. Nice flavorful, colorful salad for summer!
