Roasted Chickpeas: Have You Tried Them?

Roasted chickpeas are really easy to make, and super-healthy.  I love all the variations you can come up with by using different spices.  Basically you just roast them in olive oil and then add seasoning when they come out of the oven.  

 

First, rinse and drain a can of chickpeas.  Rub them slightly between two layers of paper towels so the skins come off.

Toss in a couple tablespoons of olive oil.  Roast for about 45-50 minutes at 425 degrees until brown and crispy.

Sprinkle with any seasoning you like.  I used garlic powder, salt (leave this out for a low-sodium version), and Parmesan cheese.

Try cinnamon and sugar. Obviously omit the oil. So yummy!

Interesting! I have never had or bought chick peas, but I may need to try this.

I haven't tried them yet, but I have some pinned on pinterest that I saw. I love chickpeas and love crunchy food, so it would be a combo for me I think. A healthier snack food!

Do you toss them in any sort of shortening before roasting?  Butter, maybe?

Sounds good.  I use chickpeas a fair amount, but never tried them this way.
