Roasted chickpeas are really easy to make, and super-healthy. I love all the variations you can come up with by using different spices. Basically you just roast them in olive oil and then add seasoning when they come out of the oven.
First, rinse and drain a can of chickpeas. Rub them slightly between two layers of paper towels so the skins come off.
Toss in a couple tablespoons of olive oil. Roast for about 45-50 minutes at 425 degrees until brown and crispy.
Sprinkle with any seasoning you like. I used garlic powder, salt (leave this out for a low-sodium version), and Parmesan cheese.
