Yay!  Love fresh cherries, dried cherries and cherry pie/dessert  - they are so healthy for you too  smile.gif

I love bing cherries to eat.  My parents have a tart cherry tree in their yard, so that is what I eat in pies.  I can't stand that fake, goopy cherry pie filling stuff in a can, and I hate maraschino cherries.   I like the dried tart cherries that I get from Trader Joe's, too.

We also have a cherry tree in our yard!  They cherries are super tart, though!  Does anyone have some good recipes to make with those cherries?  I usually pick them (what my MIL doesn't pick!) and freeze them, but I have hardly made anything with them!  If you have an ideas or recipes, let me know!  Thanks!

This is the recipe my mom uses for her tart cherry pie. 

 

Cherry Pie Supreme with Crumb Topping

2/3 cup sugar
2 1/2 T. cornstarch
Dash salt
1 cup juice from cherries
1 T. butter
6 to 8 drops almond extract
4 cups thawed, drained, frozen pitted tart red cherries (save 1 cup of juice)
Pastry for 9-inch, single-crust pie.

In saucepan, combine sugar, cornstarch, and salt. Gradually add cherry juice, stirring
smooth. Cook and stir until thick and clear. Add butter and extract. Cool.

Line 9-inch pie plate with pastry. Add cherries to cornstarch mixture; pour into pastry.
Top with lattice crust. Crimp edges high and cover with foil strip. Bake in 425 degree
oven for 35 to 45 minutes. Remove foil 10 minutes before end of baking time.

For crumb top crust:  Combine 1/3 cup softened butter with 1/2 cup sugar. Stir in 3/4 cup
flour until crumbly. Sprinkle over cherries and bake as above.
