My best tip is to have everyone coming bring their own meat for their family and a side to share with everyone.  That way YOU are not the one forking the ENTIRE bill or doing all of the work...and it is more fun for everyone.  We have had SO many successful bbq's doing it this way.

Keep it simple.  Serve things that you can make in advance, such as different types of salads (potato salad, spinach salad, fruit salad, pasta salad) with a simple main and easy grilling item, like hamburgers and hot dogs or barbeque chicken.  I like to be able to enjoy my guests and not be stuck with last minute food preparations when they arrive.

For a successful outdoor gathering set aside a table with a small inflatable pool filled with ice for holding the cold food and beverages.

One tip...When we host, we provide the meat and drinks, but assign everyone else desserts and sides.  I usually take the list of those I know how are coming and split it to make sure we get an even amount of desserts and sides.

No fail dry rub that works on ANY meat (chicken, steak, pork, etc):

 

1 part paprika

1 part garlic powder

1 part seasoned salt

 

The combination really enhances the natural flavor of whatever meat you are using.  I just rub down the meat AT LEAST an hour before cooking, the night before would be even better. Then I cover it and stick it in the fridge.  No fail!  This is the way the restaurants make their steaks and other meat so tender and juicy. 

 

Note:  You could also mix it up a bit by adding some chili powder or maybe some dried onions for a slight variation.

For smores instead of chocolate bar we use a peanut butter cup.

Those EZ-up canopies for shade over the tables are a must!

Freeze plastic bags with water flat, make sure they a good seal and double bag them.  Then when you have foods that need to stay cold you can put them under the food dish.
