If you are a working mom, how is your family handling daytime meals without you for the summer?

I thought this over the last week of school and decided that the easiest thing was going to be to post kid friendly meals that are easy for my teenager to cook on a menu for each week...and then buy all groceries ahead of time to make sure she has everything. Today was frozen pizza and fruit.  Tomorrow is ramen with crackers and cheese.  Yesterday was frozen tv dinners (a treat!).  It is working well for us. 

 

What do you and yours do?

I know your weekends are busy but I have a friend that will make things like lasagna during the week and make one extra and freeze it for later. I am sure if you started doing this it would help during the week also and cut down on processed foods. I know homemade pot pies freeze well. Cooked/grilled chicken, mashed potato's, There are a lot of things  you can freeze and turn out well being reheated or cooked straight from the freezer.

During the day, my kids fend for themselves. Cereal, sandwiches, frozen pizza, canned pasta, leftovers, etc.

I do this for suppers.  I grilled Sunday night and did several types of meat to spread out over the work week.  I also use my crock pot a LOT now.  Lunches, though, I just want to be as simple and quick as possible for E.

sorry I thought you ment dinner. We do a lot of dinner left overs for lunch in our house, Also sandwiches, my oldest will eat Pb&j ever day.

My kid just always ate sandwiches.  I had cut up vegetables and fruits available too.  They were making their own lunches since 4th grade, so when I went full-time it wasn't a big deal.

Lunch means a sandwich in my house. If you don't want a sandwich, you fend for yourself.

My girls eat mac and cheese or shells and cheese, youngest likes ramen noodles, sandwiches, pizza on bread.......They fend for themselves most days.

both of mine are teenagers and know how to fend for themselves while i am at work. so i am covered there. DD and DS have both said if i make supper ahead of time or leave the recipe out they will make or put it into the oven if i am running late working so it will be ready when i get home.

Not to hi-jack this thread but remember that little girl I was watching before we moved? Well, I was going to try to teach the girl how to cook but her mom nixed the idea. I just heard from the mom that she couldn't find anyone else to watch the girl during the summer so now the girl is home alone - all day, at least 14 hours (6am to about 8:30pm). Her mom said that she leaves breakfast for the girl and mom cooks dinner when she gets home. During the day the girl has to eat whatever she can find in the frig (no using the microwave) or the cupboard (no cooking) Oh and BTW, the girl stays inside the apartment the entire day - usually on chat.

 

How sad.
