My son's favorite grocery store cookies are the Lofthouse cookies with frosting and sprinkles. I found numerous copycat recipes online, but this is the combination that worked for us:
Lofthouse Cookies Recipe:
6 C. flour, divided
1 tsp. baking soda
1 tsp. baking powder
1 C. butter, softened
2 C. sugar
3 eggs
1 tsp. vanilla
1 1/2 C. sour cream
In a mixer, blend butter and sugar until fluffy. Add eggs one at a time. Add vanilla and sour cream and mix until combined. In a bowl, combine 5 C. flour, baking soda and baking powder. Add to the sugar mixture gradually until well-combined.
On a floured surface, divide dough in two or three sections (it will be sticky). Add enough flour to roll into 3" round tubes as shown here. Chill overnight or at least 8 hours. You may have to re-roll them in the tubes as the dough gets colder to create the round shape you're after. After completely chilled, preheat oven to 400 degrees. Cut the dough into 1/4" round slices. Alternately, you could roll out and use a cookie cutter. Bake 8-10 minutes. Note: Next time I will bake on parchment paper. The bottoms of my cookies got more done than I wanted them to get.

1 C. butter, softened
4 C. powdered sugar
1 tsp. vanilla
6 Tbsp. cream or milk
Sprinkles
