4th of July leftovers

Well I have a ton of food leftover. Four people cancelled on us and no one took anything home. :( Guess I will be getting creative in the kitchen for the next few days.

What did you have left over and what do you plan on doing with it?

 

I had:

Shrimp-Going to make red curry shrimp over rice today for Dh's lunch

Fried Chicken-After dinner tonight I am stripping the meat, throwing it in the freezer, and will use it for chicken terriyaki next week.

Hot dogs-Dinner tonight, then probably feeding them to the animals.

Mac Salad-I will add a can of tuna to what ever is left over after tonight and that will be my lunch for a couple of days.

Fruit Salad-Dinner tonight

Squash Casserole-Dinner tonight then throwing it out. No idea what to do with it.

I told DH & the girls to eat leftovers for lunch today so they all get eaten up.   We didn't have much left as we went to someone else's house & only took home what we brought plus a few ears of corn.

We had quite a bit leftover. Bil brought all the food, but he wouldn't take the leftovers with him. Plus our frig was already loaded with leftovers, so we are eating what's there today, lunch and dinner. Actually my boys had leftover cupcakes for breakfast smile.gif

We had one corn on the cob left, a small container of pasta salad (I think DH took those today for lunch), and a huge bowl of cut up fruit, so we'll have fruit for lunch today, hopefully we can eat it all before it goes bad.  We made burgers from frozen patties, and we have those left over, but they are still frozen.  We do also have some pop left over and Gatoraid.
