We went to Bonefish Grill last night and they have something called a Lollipop Roll, they take a cucumber, hollow it out, fill it with I forgot what and use it instead of rice and seaweed! That has me interested to make it!

Oooh!  Yum!  I found the description online:   Lollipop Sushi Roll (Atlantic salmon, albacore tuna, ahi tuna and crab wrapped in cucumber with a rice wine wasabi dipping sauce)

It's not difficult. You cook short grain rice and dress it with a rice vinegar and sugar solution to make it sticky.

You put a sheet of plastic wrap on a bamboo sushi mat, put a layer of rice and a sheet of nori (dried seaweed), and whatever filling you want, and roll it up using the mat.

This is how I make it as well.

My favorite to make is the spicy crab roll.  Rice, nori and then mix together crab, Japanese mayo and Sriracha.

I found my nori, mat and the mayo at our local Asian store.  I also buy my rice, rice noodles, soy sauce, rice vinegar etc there too because its much cheaper.

That sounds yummy!  Good tip to look at an Asian store to save money.  I forget that we even have one in our community!  Luckily the things I've found at our Cub foods store are pretty reasonable.

Oh yes, I love the Asian store!  Mine has a nice produce section too where I can get bok choy and fresh ginger really cheap too.

And the frozen section has mini egg rolls and potstickers and stuff.  Nice to have on hand for a quick dinner.   Oh, and the green tea ice cream.  YUM!

Mine also has a small kitchen/decor section and I have bought small things for stockings at Christmas.  Really nice decorative chopsticks, a mini buddha statue, Asian candy, roasted wasabi peas, incense, etc.

I'm lucky that I live in a city with all kinds of different ethnic stores.  In within five miles of me I have two Asian stores, a Mexican store, a European store and an Indian store.  Lots of good finds!

I guess we're lucky because Cub Foods has all those things in their ethnic aisles (just not the decor/kitchen items).  They also have a great Indian Food selection, Mexican, German and other Eastern European things.  I feel like a kid in a candy store there.  Yummy!

Second attempt (tonight) went MUCH better.  Thanks for the advice on using less rice!  This time I used one cup instead of one and a half.  Worked like a charm!
