Chuckwagon Chili

This recipe makes a lot so I can freeze at least half of it for another meal.  You can also substitute whatever beans you like for it.

 

Chuckwagon Chili

 

Ingredients

 

2 lbs lean ground beef

1 large onion (chopped)

1 bell pepper (chopped)

2 Tablespoons chili powder

1 Tablespoon oregano

1 1/2 Tablespoons cumin

1 teaspoon black pepper

2 teaspoons salt

1 can of tomato sauce (30 ounce)

1 can diced tomatoes (30 ounce)

1 can kidney beans (30 oz)

1 can black beans (30 oz)

 

Brown beef with onion in a large stew ot.  Drain off the fat and add the bell peppers and spices.  Mix well.  Over high heat, add remaining ingredients and stir until hot and bubbly.  Reduce heat and simmer for 20 minutes.

Hmmm....I've never put black beans in chili, but I love them so that sounds good.

It's what I had on hand tonight!  I usually use pinto beans.  I do think any type of bean would work.

I'll have to give this a try.  I like having different chili recipes because they all taste different and keeps us from getting bored.
