I can't believe how fast and easy this soup is to make! Of course, you have to have cooked rice on hand, or else you can use minute rice to make it quickly. My family has had this recipe twice now and they all loved it. Recipe adapted from Favorite Family Recipes.
5 Minute Black Bean Soup
2 cans black beans (not drained)
1 can chicken broth
1/2 teaspoon salt
2 cups cooked rice
Blend the beans and chicken broth in a blender until smooth. Add the salt and heat on the stovetop until warm. Serve over rice in bowls.
You can garnish with any taco toppings you like: sour cream, shredded cheese, tortilla chips, avocado, diced tomatoes, sliced green onions, etc. I liked it with tomatoes, cheese and chips. The tomatoes really added to the flavor, I thought.
