Ideas for cucumbers

We have a ton of cucumber at our house!  What do you do with yours?  I'm going to make some pickles (so if you've got an amazing recipe, let me know!).

 

Other than pickles, do you do anything else with them?

I like cucumber water.  I  had it once at a fancy-shmancy spa I had a gift certificate to.

We all love plain cukes, so they really don't last long here. They're gone as soon as I bring them in the house. DD especially has been nabbing them out of the garden and bringing them in before they are even totally ripe, "will you cut this up for me?" while handing me some f 'ed up looking cucumber. Nevermind the deer, I'm going to need to keep that hot tape on to keep her out ROTF.gif

We like sliced cucumbers with hummus, or in green salads. 

My family and I also really like this Japanese cucumber salad from allrecipes.com  Super easy and refreshing.

 

Cucumber Sunomono

Ingredients

  • 2 large cucumbers, peeled

  • 1/3 cup rice vinegar

  • 4 teaspoons white sugar

  • 1 teaspoon salt

  • 1 1/2 teaspoons minced fresh ginger root

Directions

  1. Cut cucumbers in half lengthwise and scoop out any large seeds. Slice crosswise into very thin slices.

  2. In a small bowl combine vinegar, sugar, salt and ginger. Mix well. Place cucumbers inside of the bowl, stir so that cucumbers are coated with the mixture. Refrigerate the bowl of cucumbers for at least 1 hour before serving.

I slice them up and then pour vinegar over them. Yummy!

I just slice them up , squeeze some lemon and add a little salt on them.

I always ate them with a sprinkle of cider vinegar and lots of dill weed. My DD is allergic to them so, no more.
