Eclair Cake

I can't believe I haven't shared this recipe here yet. It is my favorite dessert EVER.

Eclair Cake

 

Crust:

1 stick butter

1 c. water

1/2 t. salt

1 c. flour

4 eggs

 

Filling:

1 8 oz package of cream cheese, softened

2 small packages french vanilla pudding

3 c. milk

 

Topping:

1 container whipped topping

chocolate syrup (I used homemade chocolate sauce)

 

In a medium saucepan, bring water, margarine and salt to a boil. Remove from heat and stir in flour. Add eggs, beating between each. Spread batter on a greased jelly roll pan and bake at 400 for 15-20 minutes. Prick bubbles with a fork every 5 minutes.

 

Beat cream cheese with pudding and milk. Lumps will remain. Spread filling over cooled crust. Spread whipped topping on filling. Drizzle with chocolate syrup just before serving.

I've made this before, but I didn't make my own crust. I bought those already crushed graham crackers and mixed butter with them then smashed them into the bottom. Mine also looked much taller than yours. I don't know if it was the size of the pan or I used more stuff, but mine was about twice as tall.

It IS yummy though.

It IS yummy though.

Yeah, if you made it in a smaller pan, it'd be taller.  Graham cracker crust sounds good!

graham cracker crust pushes it closer to a cheesecake type item, hmm, that's right up my alley

 

 

 

And what in the world is a jelly roll pan? Do you just mean a regular loaf pan?

I did mine in a 9X13 pan. But as I said above, I must have used more ingredients because mine was at least twice as much filling tall.

A jelly roll pan has edges not as tall as a regular baking pan.   This looks delicious!
