What seasoning do you use when you roast chicken?

I am roasting a chicken today.  Usually, I just rub it down with olive oil and then use salt and pepper.  I was going to try something different, but it's a little tricky - since I don't eat meat, I can't taste it, so I wanted something others thought of as "tried and true".  Any suggestions?

garlic and rosemary are quick adds

 

If you have an Italian seasoning jar of spices that's also an easy one

 

Whatever you add though still don't skimp on the salt, that's what helps to keep it cooking up nice and moist.

I agree with Karen. Garlic and rosemary in the cavity of the bird, with a lemon cut in quarters is good.

I have done the above too and we like it but most the time I run with olive oil and then cover with garlic powder dusting all over bird it is very yummy oh also I do not cover it at all.

paprika & garlic powder. Sprinkle it the night before & cook the next day. We do that on the grill all the time.

I do make Lemon chicken I usually put a lemon insude of the chicken and then lemon pepper on the outside of the chicken along

with sage and poultry seasoning.
