It's Cajun corn stew - you strip the corn off the cob, cutting halfway through the kernels, then milk the kernels. Saute the corn in butter with onions, bell pepper, and celery, then add garlic, scallions, and tomatoes, and cayenne to taste. It's even better if you have some tasso, andouille, or shrimp to add to it.

That sounds good! I saw that on the menu at the Blue Bayou last week, but it was a side to a fish dish so I didn't get to try it (I don't eat seafood).
