Mexican Pork Roast

I made this the other day and it was quite yummy.

 

Mexican Pork Roast

-boneless pork loin

-onions

-bell peppers( I used red and yellow, but you could use whatever)

-cumin

-garlic powder

-1 jar of red salsa

-1 jar of green salsa

 

Place roast in crockpot.  Cover with sliced onions and bell peppers.  Sprinkle generously with cumin and garlic powder.  Pour salsas on top.  Cook on low for 6-8 hours.

 

This comes out fork tender.  I shredded it up and served over rice with some of the sauce and then a tablespoon of guacamole.

The next day I made a taco soup using the leftover shredded pork.
