KFC Coleslaw Recipe Copycat

There are a lot of variations and recipes for cole slaw. How do you make it (if you do make it)?

Here is my favorite recipe. The flavor is close to the KFC cole slaw but seems a little lighter.  If you want it to taste more like a KFC copycat, then go heavier on the mayo/miracle whip and lighter on the cream.



Cole Slaw:
1 medium head cabbage
2 carrots
1 onion
1/4 green pepper
1 stalk celery

Cole Slaw Dressing:
1 c. Miracle Whip
1/2 c. heavy cream
2/3 c. sugar
2 tsp. mustard
1 tsp. salt

I actually don't like coleslaw but I made this variation that uses sour cream and I really like it in tacos.

 

1/2 head cabbage, shredded

1 carrot, shredded

2 limes, zested and juiced

1 t. sugar

1/2 c. sour cream

I don't really make coleslaw much at all but my DH loves it so we get it sometimes carryout from a restaurant or a deli counter. I did make a blue cheese coleslaw once that I though was delicious, but you have to like blue cheese.

That sounds good.  Do you still have the recipe?  We love blue cheese.

I don't still have the exact recipe as my DH & DS didn't care for it (neither like blue cheese) but I found a recipe that sounds like what it was. Both of them LOVE traditional cole slaw, so I just went back to that. I'm not sure, but I think I might have crumbled a bit of bacon on top of mine too. Now that I'm looking at the recipe I'm thinking I might make it again this wknd just for DD & I. It sounds so good to me again!! Hope your family likes it!!

I am not a big cole slaw fan, and have never actually made it.  I like KFC's once in awhile, and mil gets one from GFS that's pretty similar that I like, too.  My Gramma always made a vinegar based cole slaw, usually using the vinegar from her homemade dill or sweet pickles, which I didn't really like. 

 

Recently we ate at Boston's and dh's sandwich came with a little bowl of cole slaw which he passed to me because he doesn't like it, and it was really different but very good.  It's called Baja Slaw, and I think it's just sliced cabbage and pico de gallo.  It doesn't have a real dressing on it, just a little juice from the pico de gallo, and the spice is really good with the cabbage. I've searched for recipes and come up with several variations on Baja Slaw, but none of them are close to what this was.   I've never had anything like it, but I definitely want to try to make it this summer.

My family likes the one that is supposedly a KFC clone.  It makes a lot, so if I am making it for just my immediate family I cut the recipe in half. I also usually dice it up really fine in the food processor or blender (add water & drain well) since we prefer smaller pieces of cabbage

 

"KFC" Coleslaw:

8 c shredded coleslaw

1/4c carrot, shredded

1/3c sugar

1/2 teas salt

1/8 teas pepper

1/4 c milk

1/2c mayonnaise

1/4c buttermilk

1 1/2 tbls white vinegar

2 1/2 tbls lemon juice

 

Combine cabbage and carrots in large shallow bowl.  Mix remaining ingredients together and combine thoroughly.  Pour liquid ingredients over cabbage and carrots and stir.  Refrigerate at least two hours before serving (overnight is better).  Stir well before serving.

Well I have made this recipe many times and everyone loves it. What I have done is to substitute butter 
 
for the sugar and used pistachio milk instead of regular milk. Both give the slaw a sweeter taste.
