Crock Pot Beef Tips

I wanted to make beef tips in the Crock Pot, but all the recipes I found called for cream of mushroom soup, which I neither had nor like. I ended up making something up completely from scratch, kind of based on my beef stroganoff recipe.  It made a great easy Sunday dinner.

 

Crock Pot Beef Tips Recipe

1- 1 1/4 lb beef tips

1/3 c. flour

1/2 c. chopped onion

1 lb mushrooms

1 can beef broth

2 t. ketchup

1 t. Worcestershire sauce

1 T. red wine vinegar

3 T. flour

cooked, buttered egg noodles

 

Dredge the beef in flour and put in the crock pot.  Add the mushrooms and onions.  Reserving 1/3 c. of beef broth, mix the rest with ketchup, Worcestershire sauce and vinegar.  Cook on low 6 hours or until beef is cooked.  Mix 3 T. flour with reserved beef broth.  Stir into Crock Pot.  Cook for another 20-30 minutes until gravy is thickened.

I've never dredged meat with flour and then put it in the crockpot without browning the meat first. Did you brown it first?

Nope. I never do that, or cook onions etc first if I'm using the crock pot because I think a crock pot meal should be less work - not more.

I usually don't brown meat before putting it in the crock pot, but it doesn't have flour on it. I thought the purpose of putting flour on meat was so it would get a brown crunchy crust. I don't cook onions either. I usually just dump everything in, but just have never heard of putting floured meat without browning it first in the crock pot. Oh well....if it worked, then I guess it's okay.

I've done that with chicken and cornstarch. In this recipe, I used the flour on the beef to start the sauce thickening. You can do that when making beef stew in the crock pot, to make it a little thick. But since I wanted a thicker gravy, not soup, I added more flour at the end, too. Maybe I could skip the first step.
