Bacon Jam in the Crock Pot

We recently had bacon jam on hot dogs at our local Brew Fest.  It was SO GOOD.  The guy gave us the recipe.  I can't wait to try it tomorrow.  It spent the day in the slow cooker and tomorrow I'll chop it up more finely before serving.  It will keep in the refrigerator for at least 2-3 weeks.  I posted it on my Facebook page and someone else said it's really good on bagels.  I would also think it would be great on burgers.

If you have had bacon jam, how did you serve it?

Savory Bacon Jam

1 1/2 lb. bacon, cooked and crumbled (save about half of the drippings to use in the mix too)

2 medium yellow onions, diced

3 garlic cloves, finely minced

1/2 C. apple cider vinegar

1/2 C. brown sugar

1/4 C. maple syrup

3/4 C. coffee

Place all ingredients in a slow cooker on low for 6-8 hours until sauce turns to a nice syrupy consistency.  Chop to desired consistency before serving.

This would be a great homemade gift, canned like regular jam or jelly.  Especially for hard to buy for guys on your list, or maybe in a gift basket with grilling stuff.

I have made something similar to this before and have recently been given a jar of bacon jam as a gift. Best gift ever cuz it takes a really long time to make! It was really good...Red Chili & Garlic. It is called "The Bacon Jams" they have a website but I have not ordered from it yet.

I wonder If you could find directions for pressure canning It? Acid content would be too low for BWB.
Maybe It would freeze well?

i'm not experienced with canning, so I can't answer your question.  Sorry.  Maybe someone else can?  I bet freezing would work, but canning would be ideal for gift-giving.

When Kim first posted this I went and looked on pinterest and there were quite a few people with bacon jam recipes just like this one (including Martha Stewart). I didn't see any that mentioned canning or freezing, so maybe that's not a good choice. The ones I read just said that it will keep in the refrigerator for about a month, so I'd probably just do that. If gifting it, I'd just remind the person to refrigerate it and use it within a month.

One suggestion I read that I thought sounded SOOOO good was to put a spoonful of the "jam" on top of a serving of green beans. Oh yum.
