This is so easy!  The prep time was less than 10 minutes!  Plus you can make it ahead of time and keep it in a ziplock in the fridge or freezer to dump into the crockpot in the morning.

 

Crock Pot Apricot Mustard Pork Roast

 

  • Boneless pork roast (about 2 lbs)
  • 1/2 cup of orange juice
  • 1/4 cup of brown sugar
  • 1/4 cup apricot preserves (orange marmalade would taste good too!)
  • 1 tablespoon of spicy brown mustard

 

All you do it pour the last 4 ingredients into a bowl and mix them well.  Those measurements are all estimates.  You can taste your sauce and make sure the flavor is right.  Then you pour it over the roast in the crock pot.  Mine is only 2 lbs so I'm cooking it on high for 4 hrs.  If it's a larger roast or frozen, I would cook it on low for 8 hrs (or all day).  

 

I'm serving it tonight with butter noodles frozen corn, and a salad.

 

Tip:  If you throw potatoes, onions, and carrots into the crock pot you will have a "one pot meal!"
