Crock Pot Roast Recipes

Does anyone have an easy beef roast recipe for the crock pot?

The only one I've made in the crock pot is a pot roast straight from the book that came with it:

 

Ingredients

 

3 1/2 - 4 lb "beef arm or boneless pot roast" (I use a chuck roast fairly often)

 

1/4 cup flour

2 tsp salt

1/8 tsp pepper

 

** 3 carrots, pared, sliced lengthwise and cut into 2 inch pieces

** 3 potatoes, peeled and quartered

2 small onions, sliced

1 stalk celery (I cut mine large so I can fish it out after it's all cooked)

 

1 2 oz jar mushrooms or 1/4 mushroom gravy (I've only ever used the mushrooms)

3 Tbs flour

1/4 cup water

 

Directions

Trim all excess fat from roast; brown and drain if using chuck or another highly marbled cut.
Combine 1/4 cup flour, the salt and pepper.
Coat meat with the flour mixture.
Place all vegetables except mushrooms in crock pot and top with roast (cut roast in half, if necessary, to fit easily).
Spread mushrooms evenly over top of roast.
Cover and cook on low setting for 10 to 12 hours.
If desired, turn to high setting during last hour to soften vegetables and make a gravy.
To thicken gravy, make a smooth paste of the 3 tablespoons flour and the water and stir into crock pot.

 

** I use extra carrots and potatoes, as many as the crockpot will hold.  Then I use all the leftovers to make stew for another meal.

I made this Italian beef roast last week that we loved! It's just diced veggies, canned Italian flavored tomatoes and canned Italian flavored tomato paste, then a roast on top (brown the roast first). It was very yummy! I didn't add any salt since we try to restrict salt, but if I was cooking it for others I would add it. I did add a bit more Italian seasoning just "cause". http://www.pinterest.com/pin/211880357442894261/

Pot Roast

 

Ingredients:

  • 8 baby carrots cut into halves
  • 5 baby potatoes cut in halves
  • 2 medium onions, each cut into 8 wedges
  • Freshly ground pepper and salt to taste
  • 1 beef chuck roast (3 pounds), remove fat
  • 2 tablespoons Worcestershire sauce
  • 1 packet vegetable soup mix
