I don't know about you all but I so EXCITED about National Chocolate Ice Cream Day on June 7th...


This weeks holidays are:

National Applesauce Cake Day--June 6
National Chocolate Ice Cream Day--June 7




And a reminder...~entire month~ of JUNE has been declared:

National Iced Tea Month
Turkey Lover's Month
National Fresh Fruit and Vegetables Month
National Papaya Month
National Dairy Month


~~Applesauce Cake~~

1 c raisins,chopped (optional)
1 1/2 c flour
2 tsp cinnamon
1/2 tsp ground cloves
1 tsp salt
1/2 c butter, softened
1 c sugar
1 tsp baking soda
1 c unsweetened applesauce


Preheat oven to 350
Grease and flour a 9 inch square pan.

Combine raisins and flour. Add cinnamon, cloves and salt. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Dissolve baking soda into applesauce and mix into creamed butter. Add flour mixture. Mix until smooth.
Pour batter into a 9 inch square pan. Bake at 350 40 to 50 minutes or til a toothpick inserted into center of cake comes out clean.


~~Cappuccino Cooler~~(a fun way for Mommy to celebrate Choc ice cream day )

1 1/2 c cold coffee
1 1/2 c chocolate ice cream
1/4 c chocolate syrup
crushed ice
whipped cream

In a blender, combine coffee, ice cream and chocolate syrup.
Blend until smooth. Pour over crushed ice. Garnish with whipped cream and enjoy.

dont wanna do cake....how about applesauce muffins........

2 c biscuick
1/4 c sugar
1 tsp cinnamon
1 egg
1/2 c applesauce
1/4 c milk
2 Tbs veg oil


TOPPING:

1/4 c sugar
1/4 tsp cinnamon
2 Tbs butter,melted


Mix biscuck, sugar and cinnamon.

In another bowl, beat the egg, applesauce, milk and oil.

Stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full.

Bake at 400 10-12 minutes or until a toothpick comes out clean.

Cool 5 min ,remove from pan to a wire rack.

Mix sugar and cinnamon. Dip muffin tops in melted butter, then in cinn/sugar.

Chocolate Mint Milkshakes

4 scoopschocolate ice cream
1/4 c milk
1/4 c chocolate syrup
1 drop peppermint extract

Blend all and voila.~B~L~I~S~S~
