Crock Pot Chicken Dinner

1 whole frying chicken, rinsed,guts removed
8 large carrots, peeled and cut into 2 in pieces
6 potatoes, peeled
1 pkg dry onion soup
1 1/2 tsp basil
1 c chicken broth

Put chicken, carrots and potatoes in slow cooker.
Mix rest of ingr and pour over chicken.
Cover and cook on high about 5 hours or on low for about 9 hours,til chicken leg and thigh come off easily when pulled. :happy dance:

Add a roll and a drink and it's DINNER!!

Trudy, you've done it again. You have given me a wonderful recipe. Did this one tonight. Everyone loved it.

Isn't it great when you can out a whole meal together in NO time....thats is deliscious?!?!?

Making this again!! Can't wait. If you have not tried this recipe, I highly recommend it. I also posted my reviews and few changes I did under the dinner challenge. Check that and than give this recipe a try!!
It also makes a great stock for later use. I measured out about 1 1/2 cups of broth to make gravy out of and froze the rest which was at least 2 cups. Plus, there is enough chicken for another meal!

A question for the knowledgeable ladies who use crock pots often.... Im new to this so ...
How do you do gravy using the broth left over from a previous crock pot meal?? Do i freeze the broth from that meal as it is? or do i prepare the gravy and then freeze it? Hmmm, how do you prepare a gravy? do you use a crock pot as well??

You can make the gravy in the crock pot...just make sure its on HIGH!!!


I usually like to strain my broths though...so I usually strain,cool and freeze(freeze broth NOT gravy)
or strain into a saucepan and make gravy from there.

( usually mix about 2-3 GOOD Tbs of cornstarch w/1/4 c water.....add to hot broth ,bring to a boil and voila...gravy in seconds!)

Sorry, im new to the kitchen... You heat the broth on the stove top or directly in the crock pot? how long you leave it in the crock pot?

happymommmy-Everything that mommy2mercedes said is what I was gonna say. When I made my gravy, I did to it on the stove top. That is just me. I just left everything else in the crock pot (chicken and carrots) and than made my gravy. Once it was done, I served up everyone's plate. M2M can tell you how to do the gravy in the crock pot and how long to leave it.
Also I did not put the potatoes in the crock pot as my family likes mashed potatoes more.

Good Luck with this recipe. It is wonderful.

I have the best luck with things cooked on HIGH....I just whisk in my slurry(keep the heat on high)put the lid on and leave it alone about 3-5 minutes....it always just thickens right up.
