Linguine with Clam Sauce

Linguine with White Clam Sauce
Even my kids love this one!


1 (12 ounce) package linguini pasta
3 (8 ounce) cans minced clams, with juice
1/4 cup olive oil
1 clove garlic, minced
3/4 cup chopped parsley
2 tablespoons white wine
1 teaspoon dried basil
1/2 teaspoon salt

In a large pot with boiling salted water cook linguini pasta until al dente. Drain.
In a large skillet saute the garlic in the olive oil. Add the liquid from the clams, parsley, white wine, basil, and salt and stir well. Cook for 10 minutes. Stir in clams until heated through.
Toss cooked and drained linguini pasta with the clam sauce and serve warm.

 I love linguine and clam sauce because it's cheap, the kids like it, and it takes less than 30 minutes from start to finish.  Here is the version I made last night. 

 

Linguine with Clam Sauce

1/4 C. butter

2 Tbsp. olive oil
2 cloves garlic, minced

1 onion, diced finely

1 stalk celery, diced finely

2 (8 ounce) cans minced clams, with juice

3 Tbsp. lemon juice

1 Tbsp. cornstarch

1/2 cup chopped fresh parsley (I used flat leaf from our garden)

1 tsp. Italian seasoning

1/2 C. Parmesan cheese (I don't use the green can kind, but that works too)

 

In skillet, melt butter and olive oil.  Saute garlic, onion and celery until translucent.  In a small bowl, mix cornstarch with wine and lemon juice.  Add clams and their juices.  Add cornstarch mixture and heat until sauce starts to thicken.  Add parsley and Italian seasoning and top with Parmesan cheese.  Serve over linguine noodles.
