Spinach Salads

I have a 1 YR. old and a 3 YR. old , they just LOVE this..

mix some raw, rinced spinach leaves
some Feta cheese, crumbled up
some shreaded carrots
some Cran- raisins.
and serve, you can add croutons and a dressing if you like, I don't cuz its great just plain!

This is my dd's favorite salad, except we don't do the carrots but do add walnuts. So ours is just spinach, feta, dried cranberries & walnuts. Yum, yum!!

This is one of my favorite spinach salads.  It's really easy, and even though goat cheese can be expensive a little bit goes a long way.

 

Spinach Goat Cheese Salad w/Walnut Vinaigrette

Spinach leaves

Goat cheese crumbles

Pear slices (I used canned for convenience)

 

Dressing:

2 Tbsp. butter

2 Tbsp. red wine vinegar

1/4 C. brown sugar

1 C. chopped walnuts

 

In small saucepan over medium heat, melt the butter.  Add vinegar, brown sugar, and walnuts and heat until bubbly.

I'll have to try your recipe Kim.  I love spinach salads.

 

I usually make a spinach salad with:

spinach

red onions

mandarin oranges

pineapple

raspberry vinagrette

I usually have the basic salad with bacon and eggs, but this sounds yummy!  I'm going shopping today, I'll need to pick some of this stuff up.

Thanks Kim! I must try it. Just got my share for the next two weeks from Annie's Organic Farm and it had some spinach in there. Plus I got sliced canned pears yesterday since Publix had them BOGO! I think my kids are going to love this salad!!

Let me know what you think.  My daughter ate it, but my son wanted nothing to do with it.  :)

I like these sorts of salads - especially w/ fruit on them, like the pears.

 

Kim, since I've been changing how I eat & tracking calories to lose weight, I'd tell you that I would maybe have 1 T of walnuts on that salad. I was stunned when I learned how many calories are in walnuts, and when I get a salad like that at a restaurant, I tell them to skip them or put them on the side so I can use just a small amount. I know nuts are healthy, and I do eat them, but a cup of walnuts are over 800 calories...
