I half this recipe and use ground beef. It makes more than enough for my family of 6. It is very filling and everyone loves it.
I only make it every so often, I don't worry about the health factor I am sure it is probably not so healthy. I have served it twice for lunch on a weekend , I just made a green salad or a fruit salad as a side dish.

okay so I made this today.........exactly as written......only thing I always do w/cr o' shroom is hit it w/my stick blender so I did that w/the evap milk and both soups.......

I also DID use ground beef(and I had about 1/2 c cheddar to use up so I sprinkled it under the tots..........it was creamy and deliscious,not at all overly soupy and I thought if anything the evap milk just made it richer.

Quick easy and everyone loved it.

I did take a pix(that naturally looks like plain ole tt casserole)but will post it asap for anyone who hasn't yet tried it.

I've made it, in smaller version with beef and added in a can of green beans. It was pretty good actually!
