13 eggs (you need an extra for the bread crumbs)
2 rolls of ground sausage
2 T flour
1 Cup of fine bread crumbs
Vegetable oil for frying
Hardboil 12 eggs. Cut the sausage rolls into 6 hunks per roll (per pound).
Put flour into one bowl. Crack one egg into another bowl. PUt the bread crumbs in a third bowl.
Roll and egg in the lour until coated. Wrap a sausage hunk around the egg, pressing and pulling as needed to make sure you can't see any part of the egg. Do this with all 12 eggs.
Start heating up your oil. I like having at least a 1/2 inch worth of oil.
Whip the raw egg in the second bowl. Take a sausage covered egg, dip into the egg wash, then roll in the bread crumbs. Do this with all 12 eggs.
Fry for 10-12 minutes, turning to make sure they are evenly cooked.
If you make the sausage too thick, the sausage in the center won't be completely cooked. If this happens, you can microwave them for a couple minutes.
These are good hot or cold!
