This recipe is for Tuna Salad that my mom used to make and now, I do. My children love it. Chop 1 small onion, a few dill pickles (from a huge jar from Costco), 3 stalks of celery. Transfer into a large bowl then, add 1 lb. of cooked elbow macaroni, 2 cans of tuna, 3/4-1 cup of Miracle Whip(or store-brand salad dressing), 1/2 bag frozen peas-thawed, salt and pepper. Mix together and refrigerate for a few hours. You may need to add a little more Miracle Whip, depending on your preference. I usually serve this with pita bread on the side, of course bought from the bread outlet. If I get everything on sale, the cost is under $5.

2 chicken breast Boiled (save the broth)
4 or 5 TBS margarine
2 cans (app. 15 or 16 oz.) of mixed vegtables
1 can of cream celery or chicken or potatoe soup
1 cup self rising flour
1 cup milk or buttermilk (or 1/2 cup of each)
1/2 tsp sugar

Preheat open to 375 degree

Melt margarine in baking dish (small app. 8 X 8). Cube up chicken breast and spread in baking dish. Pour mixed vegtables (do not drain) and cream of whatever soup you choose in dish. Use some of the broth (almost a can full) to rinse inside the soup can and pour this over soup and vegtables.
In a separate bowl mix flour and sugar. Blend in milk. When well mixed, pour over vegtables. This mixture will be thin so don't worry. You will be surprized how this cooks up and how GOOD it is. Cook app. 35 - 45 minutes. 4 servings.

To make it less than $5, I'd use half the bbq one night, on top of the potatoes with a little sprinkle of cheese, and the other half the next night for sandwiches and fries or chips.

2 meals in a row for $5.

The BBQ chicken is also good to make bbq chicken pizza with

Not sure if this is cheating or not... We live in an area with a lot of Amish scratch and dent grocery stores. I found a 5lb bag of frozen veggie soup mix for 1.99. I added 2lbs of our own ground beef and 1 quart of home-canned venison meat. We had it for dinner one night, hubby took it for lunch the next day, and I canned 7 pints of the leftovers.

It made about 10 servings, it comes out to about .40 a serving...

And another one...

Homemade Egg Noodles (flour, eggs, salt) (approx. .50 - we have our own eggs)
discount fryer chicken brined at home for better flavor (3.40)
home-preserved veggies (approx .50 a bag)

Cook chicken in water in the over for a couple of hours. When done, cook the noodles in the broth. Serve with veggies.

Makes about 8 servings.
