A few of the frugal meals at our house: PB&J night - kids can eat pb&j sand, hubby & I eat leftovers.  The kids don't always like leftovers so they get a treat & we don't have to cook or waste food!   Breakfast for dinner, Chili - I use pork n beans instead of chili beans, it's a bit sweeter & the kids love it.  If it's really tight I can use 1/2 the amount of hamburger but same amount on the other ingredients & nobody seems to notice.  Tuna salad sandwiches or tuna salad with crackers, homemade mac n cheese with ham & onion.  I always shop with a menu planned & then occasionally will have a clean out the fridge & freezer weekend where we eat what we have on hand before making the menu & going grocery shopping.  I have 3 boys & then me & my hubby so any little thing to save is well worth it.

Totally agree: there is NEVER any leftover bacon here! Four kids, triplets that are 10, one of whom is already 5'1"....he eats a lot. Frugal is something we aim for, along with 'healthy splurges' - our kids ADORE salmon, talapia (sp?) - cheap(ish) easy, and a crowd please here:

 

Pot roast. I get the biggest pot roast I can find, usually it has a few dollars off with my grocery store card, carrots, celery (I stock up on buy1/get 1, potatoes by the 10 lb bag, lipton onion/mushroom soup when on sale) one can cream of mushroom. Kids LOVE it, and it goes for two dinners. Even the baby, at 16 months and suddenly picky eats it. Calculated out, it's about 1.25 per person.

Strata is inexpensive simply uses up leftovers, so the cost is pennies per serving.
Beat 6-8 eggs in a bowl add 2 cups of milk. Add all ingredients in this milk/egg mixture and stir.
Add any leftover cooked meat from last night's dinner such as diced chicken, sausage, hamburger or bacon.
Dice leftover vegetables such as carrots, mushrooms, spinach, celery....whatever is about to expire. Add a two cups of shredded cheese, saving a cup to spread over the top.
Add salt, pepper, and spices of your choice.
Take a few slices of any kind of bread and soak it in the egg and milk mixture.
Pour in a casserole dish and bake at 350 degrees for 30-40 min or when the center is done similar to a quiche look.
This is a good way to use up turkey after Thanksgiving.

This is not the most frugal meal that I serve, but it is rather tasty and we get a couple of meals and possibly a lunch out of it. I only have to feed my husband and I, so our grocery bill is not very high.

I love to make chicken and sausage gumbo.
I purchase a whole chicken and use probably half of the chicken in  this. I also purchase a package of sausage for $1. There are two sausage links in the package, but I only use one. I then purchase a box or package of gumbo mix. The box of gumbo mix is about $1.50 at the most and it has rice in it already. This meal is VERY filling...a medium bowl or even maybe a small bowl will fill you up.

I also make another cup of white rice with it to bulk it up a bit so that way it lasts longer. This usually means two dinners and 1 lunch for my husband and I.
