Tacos!
My favorite dish to make for our annual Cinco de Mayo party is pico de gallo. I use jalepenos, onions, tomatos and cilantro. It is relatively inexpensive depending on the tomatoes. Yummy to my tummy!!!
My favorite is probably the 7 layer dip. I love the freshness of it. Its even best when everything is homemade with fresh ingredients. Including homemade fried tortillas used in place of the chips….can’t go wrong.
Super Nachoes…. so yummy and CHEAP!!
I love guacamole (homemade) just some avocado, lemon juice, fresh garlic, and salt. Yumm!

Breakfast burritos… I make my own tortillas and I use whatever I have for leftovers.
Honestly I love all mexican food!!!!!!!!! My bff is married to a mexican and she can hook it up!!! Her mother-n-law made this spicy chicken that was so hot that it had me almost crying but I kept eating it! I LOVE MEXICAN FOOD! And when I’m not pregnant I love margaritas!!!!

Chicken quesadillas!
Wow, that is a tough one, so many to pick from! Our favorite frugal Mexican food is Mexican/Spanish Rice. Rice and salsa/picante sauce are always on hand in the pantry, so no special trip to the store, either!

Mexi Slop! Taco seasoned ground beef mixed with mexican or spanish rice-a-roni, topped w/ cheese and a side of tortilla chips and avacado. Not exactly healthy but super yummy and quick to make.

My family loves bean burritos! I could eat Mexican food everyday!
taco pizza is the best for this event.
Toast a tortilla shell, coat in light layer of refried beans, add taco meat, shreddded cheese and bake for 5 min at 325. then remove and coat with sour cream, lettuce, and salsa. Cut into 4 slices – just like pizza.
Taco Salads!!
The next morning, take your left overs from any Mexican restaurant (make sure you throw in some of the chips) and heat them ALL up in a non-stick skillet. When they are warm, stir in some eggs an cook until the eggs are set. BOOM – instant migas!
My two favs are Tacos and Rotel Cheese Dip!

My fav is a dessert. Use tortillas coat with butter and brown sugar, slice up bananas and sprinkle some chocolate chips and more brown sugar and sometimes i add some nuts then top with another tortilla with the butter and sugar… Toast up like a quesadilla and serve maybe with some extra Carmel and ice cream! Breakfast Burritos and Guacamole for a late night treat!
Family Favorite Mexican Dip 1 block cream cheese (stock up on sale), 1/2 onion, 1 tomato, 1/2 jar of salsa (use a coupon) and bag of shredded cheese (coupon of course). Spread cream cheese on bottom of pie plate, chop onion and tomato, sprinkle over CC, spread salsa, spread cheeses. Microwave until bubbly. Serve with Tortilla chips from you stock pile. This is a family favorite!!

My frugal Mexican meals are chicken nachos, bean burritos, Enchilada chicken or beef sauced burritos with cheese. Quesadillas are a favorite. Just add chicken and its a great snack – with a side of salsa of course!

taco goolosh, it is a cheese dip with hamburger, and velveta and rotell tomatoes and and green onions. you melt all that together then you pore it over your chips then but lettus and tomatoe and onions on top.
Tacos cuz they are so easy to make and oh sooo.. good!!!
Tostadas are a favorite. We make our own “shells” and mix stuff in the beans…add a little chipotle chiken and YUM!!
