The
Frugal Foodie:
Savory Spaghetti
Who doesn't like spaghetti?
It's sophisticated yet down-home at the same
time. With that kind of flexibility, you
can confidently serve it to guests or even the
pickiest child.
This is a family recipe that is
three generations old. I wish I could say
my family is from Italy (nope, they're from a
farm in Iowa) but it's not. However, I
would pit this recipe against those from anyone
named Romano, Giovanni, or Coletti.
The fresh parsley gives it great
flavor, so don't cheat and use parsley flakes.
This recipe yields 6-8 servings. If your
family is smaller, freeze part of the batch or
cut the recipe in half.

Savory Spaghetti
1 pound hamburger
1 large onion, chopped
1 clove garlic, minced
2 8-oz cans tomato sauce
2 6-oz cans tomato paste
1 1/2 C. water
1/3 C. extra virgin olive oil
1/2 C. chopped fresh parsley
½ t salt
1/4 t pepper
Brown the hamburger and onions.
Drain. Add remaining ingredients and
simmer until flavors are well incorporated;
approximately one hour. Serve over
spaghetti noodles and top with freshly grated
parmesan if desired. – FF
