Valentine’s Day Treats: Strawberry Lemonade Bars

Strawberry Lemonade Bars for Valentine's Day

Lemon bars make a delicious, bright dessert in the winter when lemons are in season.  The pink color makes these Strawberry Lemonade Bars beg to be cut into hearts for a Valentine’s Day treat. Add strawberry puree to the filling of your favorite Lemon Bars recipe, or use the recipe below.

Strawberry Lemonade Bars Crust Ingredients:

1 1/2 sticks butter
2 c. flour
1/2 c. light brown sugar
1/2 t. salt

Strawberry Lemonade Bars Filling Ingredients:

3/4 cup fresh lemon juice
zest of 1 lemon (optional – leave this out if you want your bars to be more “pink”)
1/2 cup pureed strawberries (about 3/4 cup berries)
1 1/2 cups sugar
4 large eggs
1/3 cup all purpose flour

Strawberry Lemonade Bars Crust Instructions

Cream together butter and sugar. Add flour and salt and continue mixing until mixture is crumbly. Press into an even layer in a greased 9×13 pan. Bake 20 minutes at 350.

Strawberry Lemonade Bars Filling Instructions

Mix lemon juice, lemon zest, pureed strawberries, sugar and eggs until smooth. Add in flour. Pour filling over hot crust. Reduce oven temp to 325 and bake 30 additional minutes, or until set. Once cool, sprinkle with powdered sugar.

Valentine’s Day Treat

To cut the Strawberry Lemonade Bars into hearts for a Valentine’s Day treat, cool the bars completely, and then refrigerate. Once the bars are chilled thoroughly, use a sturdy metal heart-shaped cookie cutter to create heart shapes.  Cut the shape from the pan, then push the heart up through the bottom of the cookie cutter. Sprinkle with powdered sugar before serving.
