Cooking with Kids: Flower Cupcakes

These pretty flower cupcakes are fun for the kids to help make and would be perfect to bring to an Easter gathering or Mother’s Day dinner.

Flower Cupcakes

    • One cake mix
    • White frosting
    • Coconut
    • Green food coloring (I mixed neon green with a couple drops of blue)
    • Gumdrops for flower centers
    • Large marshmallows
    • Assorted colored sugars or sprinkles

Prepare cupcakes according to package directions and allow to cool.  Place about 1/2 C. coconut in a bowl and add a few drops of green food coloring an until you achieve the desired color.   Put half the tub of frosting in a bowl and color it the same shade of green as the coconut. Slice each marshmallow in 4 slices for the petals (I found the easiest way was to slice the marshmallow in half, then in half again). Dip the face of the marshmallow in the colored sugar or sprinkles.

To assemble your flower cupcakes:  Frost each cupcake with green frosting, then “dip” the frosted part in the coconut.  Each “flower” has five petals. Use a little bit of the white frosting to attach each petal to the cupcake. Place a gumdrop in the middle.
