Copycat Recipe: Chipotle Cilantro Lime Rice

Do you love the cilantro lime rice they serve at Chipotle? I do!  A few years ago, I attempted to create a copycat recipe that comes close to the original.  When I first tried it, I asked my husband if it tasted like Chipotle. He said, “No.  It’s BETTER!“  I’ll let you be the judge.   If you try it, let me know if you think it tops the rice you get at Chipotle.  Plus, it’s not only healthy, it’s super-frugal.

Chipotle Cilantro Lime Rice

1 tsp. olive oil
2/3 C. long grain white or Basmati rice
1 tsp. lime concentrate
1 C. water
1/2 tsp. sea salt
2 tsp. fresh cilantro, chopped

In a heavy saucepan, heat olive oil over low heat.  Add rice and lime juice and stir until rice has browned slightly.  Add water and salt.  Cover and allow to simmer about 25 minutes or until water is absorbed.  Add chopped cilantro before serving.

This tastes great as a side dish or as a filler for burritos.
